On Mac I‘ve noticed, that MarginNote 3 leverages a free OCR service from Baidu.
As much as I like OCR services, I simply can‘t agree to submit my files to a service in China for data privacy reasons. Is there a way to disable Chinese OCR service and leverage another (paid) service or other already installed extension from a third party app?

There are no paid OCR service right now in Mac version.
You could try to vary your search engine in settings - research.
If you insist, we have paid offline OCR services in our iPad Apps.

Why not license ABBYY’s OCR? DEVONthink uses it and it seems to be pretty good (and well-integrated).

We do have ABBYY’s OCR (our OCR Pro service) on our iOS app. But this service currently does not support MacOS version.

Yes. You might want to look into how DEVONthink, a Mac app, is able to include ABBYY as part of its package.
